a simple salad
A salvaged disaster. I was going for this asian smoky eggplant salad but I really disliked the dressing and remembered I dont really like eggplant! (beyond babaganoush and nasu dengaku).
But what was left was delicious. Shredded cucumber (look at me! eating cucumber!), carrot, avocado, cashews, toasted pine nuts, spanish onion, mint, dressed lightly with olive oil and balsamic. I was super pissed at the failed recipe but became happier and happier as I munched into this salad. You forget how delicious and amazing fresh, raw, organic vegies can really be.
